Southern Living's Triple-Decker Strawberry CakeWednesday, April 06, 2016
I made this pretty little thing over the weekend and it turned out even better than I anticipated! And the best part is it was incredibly easy to make. I used a recipe I spotted on Southern Living's Instagram and substituted the buttercream icing for a homemade cream cheese icing (much better, in my opinion!).
Here's the dealio:
1 (18.25 ounce) box white cake mix
1 (3 ounce) box strawberry gelatin
4 large eggs
1/2 cup sugar
1/4 cup all-purpose flour
1/2 cup finely chopped strawberries
1 cup vegetable oil
1/2 cup milk
1 (8 ounce) package cream cheese - room temp is best
1 (16 ounce) tub cool whip - room temp is best
Beat cake mix and next seven ingredients with electric mixer until strawberries are well blended into the batter. Pour batter in 3 greased 9" cake pans. Bake at 350 for 23 minutes or until cakes spring back when lightly pressed with a finger. Cool on wire racks for 10 minutes. Remove from pans and let cool completely. In separate bowl, beat cream cheese and cool whip together by slowly adding scoops of cool whip to the cream cheese mix. Once icing is thoroughly mixed, spread between each layer of cake and around the sides. Garnish with fresh strawberries and prepare your belly to be very happy!
